Whenever we go somewhere new- whether it be a holiday or a more permanent move, our routines and habits change. When it comes to day to day life, I do enjoy having routines in place, yet I also see the danger in having structured routines that are resistant to change and to the flow of everyday life!
Since moving to Thailand, many of my routines and ways of living and eating have needed to shift. Luckily here I have access to wonderful healthy food, the ocean on my doorstep and the jungle all around me! I feel very immersed in nature and life always feels simple and healthy here in a way that makes me feel very content and alive.
One of the major differences though is the ability to prepare my own meals! In another week or so I will have a kitchen, but for this past 6 weeks or so my access to a kitchen has been limited, and my meals come from the extensive vegetarian menu where I am staying. ‘How lucky am I,’ you must be thinking!!! To have every meal prepared for me!!! And yes, I agree- it is such a luxury. BUT I still miss preparing my own food, especially in the mornings.
If you have followed my website or social media for any amount of time, you would know that I really am a green smoothie addict! My day doesn’t felt complete without them and I really have noticed the difference in my energy levels too these last few weeks. So, my very latest mission since arriving has been to help the staff develop a green smoothie menu – something that is simple, healthy, delicious and appeals to people from all walks of life.
There is an abundance of beautiful fresh tropical fruit here, as well as an abundance of coconut and cashews and although leafy greens are a little more limited, there is a beautiful variety of Thai spinach that is crispy and perfect for green smoothies.
The recipe below is one of my new favourite ways to start the day. It is quick and easy and I know that if I ever make it anywhere else in the world, each sip will transport me straight back to Thailand…
TROPICAL THAILAND GREEN SMOOTHIE
- 1 ripe banana
- ¼ cup of mango
- ¼ cup of pineapple
- A small slice of ginger
- 1 teaspoon of matcha powder
- 5 spinach leaves
- ½ cup of coconut milk
- ½ cup of ice
Blend all ingredients until smooth and creamy
Pour into a glass and enjoy
