My lovely man has a current obsession with Bhuja Mix, which is an India snack food made up of nuts, raisins and Indian spices. I decided to delight him by making a Quinoa dish inspired by Bhuja Mix, along with some delicious vegetables and a tahini turmeric dressing. The result was pretty terrific so I wanted to share it with you! Enjoy!

SOUL BOWL WITH BHUJA QUINOA & TURMERIC TAHINI
Ingredients:
Vegetables for Soul Bowl:
- 2 medium sweet potato sliced 1 ½cm thick
- 1 tablespoon coconut oil
- 1 small head broccoli broken into florets
- 1 red capsicum finely sliced
- 1 cup fresh rocket leaves
Preheat the oven to 180ºC. Lay the sweet potato slices out over an oiled baking tray and roast, flipping once, until tender, around 25-30 minutes.
Lightly steam the broccoli florets and set aside.
Bhuja Quinoa:
- 1 ½ cups of cooked quinoa
- 1 ½ teaspoons curry powder
- 1 ½ teaspoons turmeric powder
- 2 tablespoons coconut oil
- 2 tablespoons raisins
- 2 tablespoons flaked almonds
- 1 tablespoon pepitas
- 1 tablespoon lemon juice
- salt and pepper to season
For the quinoa, simply mix all the ingredients together in a large bowl so everything is well combined.

Tahini Turmeric Dressing:
- 1 tablespooon tahini
- ½ teaspoon turmeric powder
- 1 teaspoon tamari
- 1 teaspoon olive oil
- 1 teaspoon coconut nectar
- ¼ teaspoon nutritional yeast
- ¼ cup filter water
Place all ingredients in a small bowl and whisk well until combined, adding enough water to reach your desired consistency.
