If you’ve been following my recipes or social media for any amount of time now, you would know that I am a dedicated smoothie girl when it comes to breakfast. However, in the cooler months when I run events and cater retreats, I love whipping up a delicious warm porridge for people to enjoy. I know there really isn’t anything better than a cozy breakfast on a chilly morning!
This golden-milk inspired porridge has also been a recipe I’ve been making throughout winter for my private catering clients. One of the things I love most about porridge is that it is SO flexible. Once you have your oats and milk, there are literally endless variations to choose from when it comes to flavours and toppings.
So, I’ll share one example below but do feel free to use the measurements as a guide and get creative with your own favourite combinations! Enjoy.
GOLDEN TURMERIC PORRIDGE
Golden milk porridge
- 1 teaspoon coconut oil
- 1-2 teaspoons of turmeric latte mix (or see note)
- 1 cup oats
- 2 cups plant-based milk (I used oat milk)
- 1 tablespoon pepitas
- 1- 2 teaspoons coconut sugar (depending on your sweetness)
- 1 teaspoon flax seeds
- ¼ cup shredded coconut
- 1 ripe banana sliced
- 1 tablespoon natural coconut yogurt
- 1 teaspoon peanut butter
- 1 teaspoon maple syrup
- Goji berries, black sesame seeds and rose to sprinkle
Add the coconut oil to a small saucepan over a low-medium heat and allow to melt. Once melted, add the turmeric mix/spices and stir for a minute or so.
Add the oats and stir to coat in the spices, then add the milk and stir well. Allow to bring to a very gentle boil, stirring every couple of minutes.
When most of the milk is absorbed, add the pepitias, coconut sugar and flax seeds. Turn the heat down and allow to simmer, adding more milk if it gets too thick.
Whilst the porridge cooks, add the shredded coconut to another pan and toast lightly- watch it carefully as it can easily burn! When golden, add this to the porridge also.
Pour into a bowl and top with your favourite toppings!
